Mycotoxins are the name given to a large number of chemicals produced by mould as a means of protecting the colony from competing organisms.

Mycotoxins are poisonous chemical compounds produced by certain fungi (molds) that grow on crops, grains, nuts, and spices. These heat-stable toxins survive food processing, often occurring in warm, humid conditions before or after harvest.
