Mycology is a branch of biology which focuses on fungi. Occupying a taxonomic kingdom all its own, fungi refer to yeasts, moulds, and mushrooms found throughout the world. Scientists who specialize in the field of mycology are called mycologists. Biotoxins are substances which are both toxic and have a biological origin. They come in many forms and can be produced by nearly every type of living organism: there are mycotoxins (made by fungi), zootoxins (made by animals) and phytotoxins (made by plants).

Mycotoxins are poisonous chemical compounds produced by certain fungi (molds) that grow on crops, grains, nuts, and spices. They are dangerous to humans and livestock, causing acute chronic health issues including cancer and immune suppression when ingested, inhaled, or absorbed. These heat-stable toxins survive food processing, often occurring in warm, humid conditions before or after harvest.
